Ingredients

  • Nori sheets (roasted seaweed for sushi; full-size sheets work best)
  • Sesame oil (to brush lightly)
  • Neutral oil spray (optional, for extra even crisping)
  • Fine salt or sea salt
  • Seasonings (choose a few): furikake, garlic powder, onion powder, chili flakes, togarashi, everything bagel seasoning, or sugar for a sweet-salty option
  • Toppings (optional): toasted sesame seeds, nori komi furikake, lime zest

Instructions

  • Prep the air fryer: Preheat to 300°F (150°C) for 3 minutes. A moderate temp helps prevent scorching.
  • Cut the nori: Stack 2–3 sheets and use kitchen scissors to cut into rectangles, squares, or strips. Aim for bite-size pieces, about 2x3 inches.
  • Lightly oil: Place pieces shiny side down. Use a pastry brush to apply a thin film of sesame oil to the rough side. You only need a little—too much oil makes them bendy.
  • Season: Sprinkle with salt and your preferred seasoning. Go light, as flavors concentrate when crisp.
  • Load the basket: Arrange pieces in a single layer in the air fryer basket or on a perforated parchment sheet. Avoid overlap so they crisp evenly.
  • Air fry: Cook for 3–5 minutes at 300°F (150°C). Start checking at 2 1/2 minutes. They’re done when crisp and slightly darkened at the edges.
  • Cool to finish crisping: Transfer to a wire rack or plate. They’ll firm up as they cool. Taste and add a pinch more seasoning if needed.
  • Repeat: Continue with remaining pieces. If using multiple batches, keep finished snacks in a dry bowl or container with a paper towel.
