Preheat the air fryer to 320°F (160°C) for 3 minutes.
This helps the almonds roast evenly right from the start.
Season the almonds: In a bowl, toss the almonds with the oil until lightly coated. Sprinkle in salt and any dry seasonings you’re using. If adding a sweetener like honey or maple, drizzle it in and stir to coat.
Load the basket: Spread the almonds in a single layer in the air fryer basket.
A little overlap is fine, but avoid a thick pile for best results.
Air fry: Cook at 320°F (160°C) for 6 minutes. Shake the basket well to redistribute the nuts.
Finish roasting: Continue cooking for another 3–5 minutes, shaking once more if needed. They’re done when fragrant and a shade darker. Total time is usually 9–11 minutes.
Cool completely: Transfer to a baking sheet or plate and spread out.
Almonds crisp as they cool. Wait 15–20 minutes before storing.
Taste and adjust: While still slightly warm, taste and add a pinch more salt or a squeeze of honey if you like. If using sugar-based seasonings, let them cool fully to avoid sticking.
