Choose your figs: Pick figs that are ripe but not mushy. They should feel soft with a slight give and smell lightly sweet.
Prep the air fryer: Preheat to 300°F (150°C). This moderate heat helps the figs dry and crisp without burning.
Wash and dry: Rinse figs gently, then pat completely dry.
Moisture on the surface can cause steaming instead of crisping.
Slice evenly: Trim the tiny stem tip if tough. Slice figs crosswise into 1/8 to 1/4-inch rounds. Thinner slices yield crispier chips; thicker slices stay a bit chewy in the center.
Lightly coat: In a bowl, toss slices with oil and a pinch of salt.
If using, add a small drizzle of maple syrup or honey, and sprinkle spices to taste. Keep coatings light to prevent sticking or scorching.
Arrange in a single layer: Lay slices on the air fryer basket or tray without overlapping. Use parchment liners with holes if your basket tends to stick.
Air fry: Cook for 10 to 14 minutes, flipping halfway.
Watch closely for the last few minutes. Edges should deepen in color and look slightly dry and glossy.
Adjust for texture: For extra crunchy chips, reduce heat to 275°F (135°C) and continue for another 3 to 6 minutes, checking often. For chewier chips, stop sooner.
Cool to crisp: Transfer to a wire rack and let cool completely.
They firm up as they cool. If any slices feel soft, return them to the air fryer for 2 to 3 more minutes.
Finish and serve: Sprinkle flaky salt or add a few drops of lemon if you like. Serve plain, with yogurt, or alongside cheese and nuts.
