Air Fryer Everything Bagel Bites - Crispy, Cheesy, Bite-Sized Snacks

Ingredients

  • Refrigerated pizza dough or biscuit dough (about 1 pound) – either works; pizza dough is chewier, biscuit dough is fluffier.
  • Whipped cream cheese (8 ounces) – easier to spoon and seals better than block cream cheese.
  • Shredded mozzarella (1/2 cup) – adds a nice stretch; optional but recommended.
  • Everything bagel seasoning (3–4 tablespoons) – store-bought or homemade.
  • Egg (1 large) – for an egg wash to help seasoning stick.
  • Milk or water (1 tablespoon) – to thin the egg wash.
  • Olive oil spray – light spritz for crispness.
  • Optional add-ins: finely chopped scallions, cooked bacon bits, smoked salmon flakes, or diced jalapeños.
  • Optional dip: chive cream cheese, honey butter, or a garlicky yogurt dip.

Instructions

  • Prep the air fryer: Preheat to 360°F (182°C) for 3–5 minutes. A warm basket helps the bites crisp faster.
  • Mix the filling: In a bowl, stir together cream cheese, mozzarella, and any optional add-ins. Keep it thick so it doesn’t leak.
  • Portion the dough: If using pizza dough, cut into 16 even pieces. If using biscuit dough, split each biscuit in half horizontally to make thinner rounds.
  • Fill and seal: Flatten each piece into a small round. Add about 1 tablespoon of filling to the center. Pull the edges up and pinch to seal tightly. Roll gently into a smooth ball with the seam underneath.
  • Make the egg wash: Whisk the egg with milk or water. Brush each ball lightly. This is your “glue” for the seasoning.
  • Season generously: Roll or sprinkle each ball in everything bagel seasoning, coating the top and sides. Don’t overdo the bottom—it can burn.
  • Load the basket: Lightly spray the air fryer basket with olive oil. Place the bites seam-side down with space between them. Work in batches if needed.
  • Air fry: Cook at 360°F (182°C) for 7–10 minutes, until golden brown and slightly puffed. Start checking at 7 minutes. If using biscuit dough, they may brown faster.
  • Rest briefly: Let them sit for 2–3 minutes. The filling sets and won’t ooze out when you bite in.
  • Serve: Enjoy warm with your favorite dip, or on their own. They’re great plain because the seasoning carries a lot of flavor.
