Prep the air fryer: Preheat your air fryer to 360°F (182°C) for 3–5 minutes. Lightly spray or brush the basket with oil to prevent sticking.
Prep the pastry: On a lightly floured surface, unfold the puff pastry. Use a rolling pin to gently smooth it to about 1/8 inch thick and even out the seams.
Make the cheese mixture: In a bowl, combine cheddar, Parmesan (if using), paprika, garlic powder, salt, and a few grinds of black pepper.
Layer and seal: Brush the pastry lightly with egg wash.
Sprinkle the cheese mixture evenly over half the sheet. Fold the bare half over the cheese to sandwich it, then press gently with the rolling pin to seal and flatten slightly.
Cut the strips: With a sharp knife or pizza wheel, slice the dough into strips about 1/2 to 3/4 inch wide. For classic length, aim for 6–8 inches per strip.
Twist for texture: Hold each strip at both ends, twist it 3–4 times, and place it on a parchment square or small cutting board.
Brush the tops with a little more egg wash and sprinkle a pinch of salt if you like extra crunch.
Chill briefly: Transfer the twisted strips to the fridge or freezer for 10 minutes. Cold dough puffs better and keeps a tidy shape in the air fryer.
Air fry in batches: Arrange the chilled twists in the basket with space between them. Air fry at 360°F (182°C) for 7–10 minutes, or until puffed and deep golden. Rotate the basket or flip the straws at the 6-minute mark if your air fryer browns unevenly.
Cool slightly: Let the straws rest on a wire rack for 5 minutes.
They crisp as they cool. Repeat with remaining strips.
Serve: Enjoy warm or at room temperature. They’re great on their own or with a simple mustard dip.
