Prep the air fryer: Preheat to 375°F (190°C) for 3–5 minutes. A hot basket helps the coating crisp fast.
Slice the apples: Core the apples.
Slice into 1/4-inch rings. Keep slices even so they cook at the same rate.
Pat dry: Blot the apple rings with paper towels. Dry slices hold onto the coating better and crisp more easily.
Set up a three-bowl station: Bowl 1: Flour + a small pinch of salt.
Bowl 2: Eggs, beaten until smooth.
Bowl 3: Breadcrumbs, sugar, cinnamon, and nutmeg mixed together.
Coat the rings: Dredge each ring in flour (shake off excess), dip in egg, then press into the breadcrumb mixture until fully coated. Press gently so the crumbs stick.
Arrange in the basket: Lightly spray the air fryer basket. Place rings in a single layer without overlapping.
Mist the tops of the rings with cooking spray.
Air fry the first side: Cook for 5–6 minutes at 375°F (190°C), until lightly golden.
Flip and finish: Flip the rings, spray lightly again, and air fry 3–5 more minutes until crisp and deep golden. Thicker slices may need an extra minute.
Optional cinnamon sugar finish: While still warm, dust with a little extra cinnamon sugar or powdered sugar for a donut-shop feel.
Serve: Enjoy right away with caramel, yogurt, or maple syrup. They’re best hot and crisp.
